Spiced Lamb Meatballs in Tomato Sauce (with Mint Cucumber Yoghurt/Raita)

After a week of watching Jamie Oliver’s 15 min meals on YouTube, I’ve been really inspired to do more cooking.. here’s what I made for dinner tonight..

Spiced Lamb Meatball in Tomato Sauce

Spiced Lamb Meatballs in Tomato Sauce (and some veges)

Meatball Ingredients

  • 500gm Minced Lamb (I used Mutton in this instance)
  • 4 cloves Garlic (chopped)
  • 1 medium Onion (chopped)
  • 1 tbsp Garam Masala
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Coriander Stalks (chopped)
  • 1 Egg
  • 1 tbsp Corn Flour

Tomato Sauce Ingredients

  • 1 medium Onion (chopped)
  • 5 cloves Garlic (chopped)
  • 1 Chilli (chopped)
  • 1 can Tomato Puree (12 oz)
  • 2 large Tomatoes (diced)
  • 1 medium Eggplant/Aubergine/Brinjal (cut to bite size)
  • 8 pcs Okra (cut ends off and cut to bite size)
  • Coriander leaves
  • Salt & Pepper

Mint Cucumber Yoghurt/Raita Ingredients & Method

  • 2 cups fresh yoghurt
  • 1/2 cup Mint Leaves (finely chopped)
  • 1/2 cup grated Cucumber (squeeze out as much water as possible)
  • 1 tbsp honey
  • A pinch of Garam Masala
  • Salt to taste
  • Mix all the ingredients together and chill before serving.

Mint Cucumber Raita

Method

Step 1

  1. Mix all of the Meatball Ingredients above in a large bowl till combined.
  2. Roll mixture into balls (about the size of a golf ball).
  3. Heat up 3 tbsp of oil in a frying pan.
  4. Fry meatballs in batches over medium heat, turn often. Cook for 3-4 minutes until browned
  5. Drain on paper towels.

Step 2

  1. Remove some excess oil from the frying pan above.
  2. Re-heat frying pan and add in onion, garlic and chilli.
  3. Fry for 1-2 mins. Add in Tomato Puree and chopped tomatoes.
  4. Add in 2 cups of water and bring to a boil.
  5. Add in veges. Cook till softened.
  6. Add salt and pepper to taste.
  7. Return meatballs to the pan. Cover and cook for another 4-5mins.
  8. Sprinkle Coriander leaves over when done.
  9. Serve on a bed of steamed rice or couscous with a dollop of Mint Cucumber Yoghurt on the side.

Serves 3-4
